Finger Lickin’ Fried Chicken

From the grease on your fingers to the crumbs on your lips, fried chicken can evoke childhood memories from almost anyone. Even me. Sometimes I have a fried chicken craving from my youth. Unfortunately, my family were not, by nature, fried chicken eaters. At the Lehail house, KFC was the be-all end-all of special occasions. Buckets of chicken — with its famous blend of 11 herbs and spices — along with coleslaw, macaroni salad, fries, and biscuits, made appearances on occasions like New Year’s Eve/Day. Relatives and family friends were prerequisites.

Love at First Bite – Engagement Tandoori Chicken

I was 10 when my eldest sister, Ronnie was engaged. Since I was so much younger in age, I was oblivious to what was happening around me. I had other priorities – my daily focus was about getting to the playground across the street.

At that time, happy occasions were often viewed and celebrated using old school values. Ceremonies, such as an engagement, were broken into many smaller productions. Female family members especially the expectant bride, her mom, and older female siblings did not attend the male side’s kurmai (engagement). This auspicious ceremony is where the soon-to-be bride’s father presents the soon to be groom with something gold, like a kara, wrist chain, neck chain, you get the point. Various gifts, trays of sweets and baskets of fruit are presented. There is much pomp and circumstance surrounding it all, because after all, it’s two families uniting.

Mom’s Multisenses – Roasted Curry Chicken

My mom’s Catch-22: not eating meat, but cooking it with precision. Being vegetarian has been her lifelong personal choice. Perhaps growing up in India and cooking a multitude of veggies, beans, and lentils led to this decision. Or, maybe it was because she never really liked the texture or sight of meat, so eating it halfheartedly seemed, pretty silly.

While she may not enjoy meat, she takes great pride in making something that will ensure good eating for everyone else. If you ask her about curry chicken, she always tells the same story. Growing up in her Punjab village, it was her responsibility to make curry chicken on Diwali. The story always starts with her scrubbing the massive pot in preparation. Diligently, mashing onions, garlic, ginger, and chilies to a fine paste with a mortar and pestle. Careful to remind me that no food processor was accessible.
