Nothing is more Punjabi or Desi than saag and and makki di roti. In the Lehail household, saag is a favourite and like so many, I can attest that my mom’s is the best. My parents, both foodies, have fond memories of saag and associate eating it with love for their India, their villages, and their families. If you mention the dish, they both dreamily think of at least a dozen, if not more, childhood memories that include their own parents, siblings, joyous interactions.

My Roasted Veggie Phyllo Nests are the lovechild of a pizza and a tart. They came about out of necessity during fridge cleaning day. The task we all dread. Maybe even hate.

Fridge cleaning usually happens on a weekend afternoon, before heading to the grocery store. During the process, you find all sorts of odds and ends in the crisper drawer. Vegetables that have seen better days. Bruised or wilted. These second bests – losers even – are ideal candidates for the filling.

Princess & the Pea Crostini

I hate peas.

Or at least I think I hate peas.

For as long as I can remember, peas, even just the word itself, caused me distress. They would make appearances in rice or in various Indian dishes like carrot sabji or aloo mattar (potato and pea) dahl. I would cringe and feel repulsed.

In my mind, they were these weird greyish green orbs that had a leathery skin. Their texture was starchy and when my spoon scooped them up – they would become mushy. It was obvious, I disliked them. Any peas that hit my plate, would be picked out or pushed to the side.
