I know, it’s silly. It’s true. I avoid grating anything. I leave it as the last task in the kitchen. I have been known to bribe others, namely my niece and nephew to grate things on my behalf. Or I use the grating attachment on my food processor.

Aromatic Creamed Beet Greens

I have expressed my admiration for spinach in previous posts, but this fall has produced a bounty of beets and beet greens. So I am switching my veneration away from spinach and towards the humble beet and beet greens.

People say beets taste like metal, mud, wood, even dirty socks. (Yes, I have friend who confessed that last one to me, which makes me laugh). Please stop hating on beets. They are delicious in so many ways.

Even if you really don’t like beets. Rather, even if you kind of hate them and possibly dread the thought of eating them, you’ll love this recipe. It’s an easy way — a first step of sorts — to gain some appreciation for the beet, by using the greens.

Quick Roasted Green Beans

Every year, I fall in love with a new vegetable. Perhaps I am a romantic at heart. It’s possible. Last year, I was fascinated by Brussels sprouts. This year it is green beans. They seem to be a mainstay in every garden. Easy to grow, but no one ever is overly excited about actually eating green beans. Let’s face it, green beans suffer from neglect. They are boiled or steamed. Their lovely green hue drained of its vibrancy. Often never seasoned. Basically, they are an afterthought. Shoved limply into the shadow of whatever main dish holds the spotlight. It’s a tragedy, especially since green beans have serious promise.

Yam Conspiracy – Savory Spiced Yams & Sweet Potatoes

I love potatoes. I realize this is quite the declaration, but it is true. Versatile. Comforting. Supremely accommodating. They are perfect any time of the day. Some days, I try to sneak them into every meal. If this does not happen, rest assured I get my daily fill. For me, after hours of writing, the end of the day is always capped off by a craving and indulgence in potato chips. I go through flavour and brand rotations – Plain. Rippled. Salt & Vinegar until my tongue can no longer tolerate the acidity. Sometimes, Jalapeno because I am hooked on heat.
