Finger Lickin’ Fried Chicken

Finger Lickin’ Fried Chicken

From the grease on your fingers to the crumbs on your lips, fried chicken can evoke childhood memories from almost anyone. Even me. Sometimes I have a fried chicken craving from my youth. Unfortunately, my family were not, by nature, fried chicken eaters. At the Lehail house, KFC was the be-all end-all of special occasions. Buckets of chicken — with its famous blend of 11 herbs and spices — along with coleslaw, macaroni salad, fries, and biscuits, made appearances on occasions like New Year’s Eve/Day. Relatives and family friends were prerequisites.

Leblebi Inspired Savoury Roasted Chickpeas

Leblebi Inspired Savoury Roasted Chickpeas

Oh hello, let me introduce you to my new favourite snack: Leblebi Inspired Savoury Roasted Chickpeas.

I’ve been on a bit of a chickpea kick lately, if you hadn’t noticed already. It only made sense that I roast some up for a grazing snack to have on hand. Lately, I haven’t been consuming my daily quota of potato chips, instead I have been eating these roasted chickpeas by the fistful. They have a popcorn-esque snackiness. I can munch on them with abandon since they have benefit of being low in saturated fat and being a healthy source of iron and folate.

Gingery Carrot Magic Sauce (Dressing)

Gingery Carrot Magic Sauce (Dressing)

I HAVE A CONFESSION TO MAKE: I’M AFRAID OF THE VEGETABLE GRATER. I have Gratophobia.

I know, it’s silly. It’s true. I avoid grating anything. I leave it as the last task in the kitchen. I have been known to bribe others, namely my niece and nephew to grate things on my behalf. Or I use the grating attachment on my food processor.

The Most Perfect Chip Dip – Yogurt Chili Dip

The Most Perfect Chip Dip – Yogurt Chili Dip

I love potato chips. (Yes, I have declared this in an earlier post). I eat them daily. They are my late night snack. An indulgence. A reward for completing as many items off project “work lists”.

I go through flavour cycles and varieties. Sometimes with dip, other times without. Lately, I eat only plain or rippled chips and dip. Chips, while delicious, have a lot of preservatives, so to create some kind of balance, I make my own dip. Need more reason to eat chips with dip? Chips are good on their own, but dip adds more excitement. Part of the fun in eating chips is dipping them into a cool, creamy, tangy sauce.
