Monsoon Chermoula

Monsoon Chermoula

If you read any of my food stories, you will know I look at well used ingredients in different ways. I change the preparation and remain open to the interpretation. In case of staples like garlic, chillies, turmeric, cilantro are used frequently, if not daily, in my kitchen. What I love is when I transform them in new and exciting ways.

Upscaled Saag and Makki Di Roti

Upscaled Saag and Makki Di Roti

A balance of comfort, ’sans precedent’ of the familiar Sarson da Saag and Makki di roti.

Nothing is more Punjabi or Desi than saag and and makki di roti. In the Lehail household, saag is a favourite and like so many, I can attest that my mom’s is the best. My parents, both foodies, have fond memories of saag and associate eating it with love for their India, their villages, and their families. If you mention the dish, they both dreamily think of at least a dozen, if not more, childhood memories that include their own parents, siblings, joyous interactions.

Finger Lickin’ Fried Chicken

Finger Lickin’ Fried Chicken

From the grease on your fingers to the crumbs on your lips, fried chicken can evoke childhood memories from almost anyone. Even me. Sometimes I have a fried chicken craving from my youth. Unfortunately, my family were not, by nature, fried chicken eaters. At the Lehail house, KFC was the be-all end-all of special occasions. Buckets of chicken — with its famous blend of 11 herbs and spices — along with coleslaw, macaroni salad, fries, and biscuits, made appearances on occasions like New Year’s Eve/Day. Relatives and family friends were prerequisites.

Leblebi Inspired Savoury Roasted Chickpeas

Leblebi Inspired Savoury Roasted Chickpeas

Oh hello, let me introduce you to my new favourite snack: Leblebi Inspired Savoury Roasted Chickpeas.

I’ve been on a bit of a chickpea kick lately, if you hadn’t noticed already. It only made sense that I roast some up for a grazing snack to have on hand. Lately, I haven’t been consuming my daily quota of potato chips, instead I have been eating these roasted chickpeas by the fistful. They have a popcorn-esque snackiness. I can munch on them with abandon since they have benefit of being low in saturated fat and being a healthy source of iron and folate.
